These savory fingerling potatoes are our most popular side dish. Made with fingerling potatoes tossed in herbs, spices, and parmesan roasted until golden brown.

Ingredients
  1. Fingerling Potatoes 3 Pounds
  2. Olive Oil 1/4 Cup
  3. Grated Parmesan Cheese 1/4 Cup
  4. Garlic Powder 1 tsp.
  5. Paprika 1 tsp.
  6. Salt & Pepper To Taste
  7. Topping
  8. Shredded Parmesan 1/4 Cup
  9. Fresh Parsley 1 Tbsp.

Instructions
  1. Slice potatoes lengthways.
  2. Toss Potatoes in Oil to fully coat.
  3. Combine seasonings and GRATED parmesan together (It won't look like it's enough, but it is).
  4. Toss the seasoning/parmesan mixture with the potatoes until the potatoes are evenly coated.
  5. Pour potatoes into a single layer on a sheet pan. Turn the cut side of the potatoes down to the pan (as much as possible).
  6. Bake in Oven until golden brown and cooked all the way through.
  7. Pan up potatoes and add SHREDDED Parmesan and fresh Parsley as garnish.
